Red, White, + Blue Gluten Free Muffins

Looking for a patriotic snack this summer that your kids are going to love? Check out this gluten free muffins that are packed with strawberries and blueberries to make them red, white, + blue! They're fluffy and moist and a must make for summer holidays and barbecues.


Red, White, + Blue Muffins

  • 3/4 cup milk

  • 2 tsp lemon juice or white vinegar

  • 1/2 cup oil

  • 2 eggs

  • 1/2 cup sugar

  • 1 tsp vanilla extract

  • 2 cups + 2 tablespoons flour

  • 1/2 tsp baking soda

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1 cup diced strawberries

  • 1 cup blueberries

Preheat the oven to 375°F and lightly grease or line a muffin tin. In a small bowl mix the milk and lemon juice together, set aside.


In a large bowl, add the oil, eggs, sugar, vanilla, and milk mixture. Whisk together until combined. Next add in 2 cups of flour, baking soda, baking powder, and salt. Mid until just combined making sure not to over mix.


Add the two tablespoons of flour to a bowl with the berries. Toss to coat so the berries won’t sink to the bottom. Fold the berries into the muffin batter.


Scoop the batter into the muffin tin and bake for 25 minutes.
