Instant Pot Crack Chicken Casserole

After 5 years of offering, my kiddo ate rice!!! There are so many times that it seems like a total waste of time trying to get my picky eaters to try new foods but it finally happened! So I’m here to remind you that it might take years and you might want to just give up, but it could still happen.


So what made him try it? I covered it in his favorite food! With chicken, bacon, and cheese surrounding the rice it was bound to be delicious! He immediately complained that he doesn’t like rice but I reminded him he can’t make that claim if he’s never tried it. So he decided he would just eat the chicken and bacon ( but rice is near impossible to get off ) so he accidentally ate some and said “Hey! That rice isn’t so bad!” 🙃Did he down a whole plate? Nope, but he ate it and that’s progress!


This recipe is really easy and all made in the instant pot. Cooking the bacon before you cook the rice make that rice realllll good.


Crack Chicken Casserole


1 lb chicken breast

1 Tbsp olive oil

2 cloves garlic minced

1 tsp onion powder

1/2 tsp pepper

1 cup jasmine rice dry

1 cup chicken broth low sodium

3/4 cup Greek yogurt, plain

2/3 cup cheddar cheese shredded

8 slices bacon chopped


Drizzle your pot insert with oil and turn on the sauté function. Season chicken with pepper and place in the bottom of your pot.


Brown the chicken on both sides and no longer pink in the middle. This might take a couple rounds because you don’t want to crowd the pan. Remove from the pot and shred the chicken. Add the bacon to the bottom of the pot and cook until done. Remove the bacon from the pot and drain any grease that remains.


Add your chicken broth in the pot and use a metal spatula to scrape all of the brown bits off the bottom of the pan. Add in the rice, garlic, and onion powder and put on the lid and set to sealing. Set for manual 3 minutes and let natural release for 10 minutes.


Remove the lid and fluff the rice with a fork. Add back in the chicken and bacon along with the yogurt and cheddar cheese. Stir well to combine. Top with green onions and additional cheddar cheese, if you want!
