We always seem to have brown bananas sitting around and these gluten free banana muffins are the perfect use of them! I actually buy bananas so they will go brown for this recipe!! My kids are obsessed with these banana muffins. I keep making them and the kids keep devouring them!! They’re an easy breakfast option, snack, or even pack in their lunchbox.
Banana Bread Muffins
3 medium very ripe bananas
2 eggs
1/2 cup brown sugar
1/2 cup vegetable oil
2 cups gluten free flour blend
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chocolate chips
Preheat oven to 350°F. Grease or line muffins tin with paper liners. In a large bowl, mash the bananas with a fork or whisk. Add sugar, oil and eggs. Mix well.
Add the flour, baking powder, baking soda, and salt. Mix until combined. Add chocolate chips. Fill prepared muffin cups halfway with batter. Bake for 22-24 minutes.
